The Cabernet Sauvignon grape varietal is widely planted across South Australia's premium wine regions, particularly in the Limestone Coast where grapes with tremendous structure and beautiful aromatics are found. Well-regarded since its launch in 2002, the Koonunga Hill Cabernet Sauvignon showcases the merits of multi-regional blending to Penfolds 'House Style'. A bold, full bodied wine displaying lovely aromatics, excellent structure, and great length.

A blend of Cabernet Sauvignon parcels sourced from vineyards throughout the Barossa. The fruit is fermented for up to 14 days, then aged for 12 months in a mix of French and American oak. Individual parcels of fruit are matured separately to maximise the blend's complexity and finalised through a selection process. The resulting wine is rich and concentrated with aromas of ripe dark berry fruits, blackcurrants and plums with mint and varietal leafy notes. The palate is plush with flavours balanced by fine, textural tannins.

The Barossan showcases the superb fruit sourced from the many fabled sub-regions across the Barossa Valley. A selection of the Barossa's key growers, renowned for their quality and skill, have shared their passion and pristine fruit to create this quintessential Barossa Cabernet Sauvignon. Varying expressions of this classic varietal have been blended together seamlessly, delivering a complex and layered wine with fruit intensity and suppleness. Deep red in colour with a crimson hue, there are aromas of violet, plum and hints of spice and char leading to a rich and luscious palate with plush tannins, vibrant fruit flavour and depth from from American oak.

This Cabernet Sauvignon displays a bouquet of black briary fruit, cherry, spicy plum with hints of cigar box and violets, with the palate delivering ripe blackcurrant, morello cherry, red capsicum and chocolate notes complemented by hints of mint and cedar. A rich firmly structured wine with fruit, oak, and tannins in harmony.

The grapes were picked at between 13.5 to 14.0 Baume to produce the fruit flavours that are required to make this great wine. The grapes were fermented in a mixture of vessels to produce as much colour and flavour as possible. Portion of the wine underwent oak during fermentation and once dry, the remaining went to oak until the right balance was achieved. Careful tasting and blending, by Quarisa's winemaker, help produce this wine of style and great value for money.

Deep purple with aromas of black current and licorice. Full, rich and soft.

This is a wine of great intensity. It has distinctive blackcurrant and cassis fruit flavours. Subtle oak characters of cedar cigar box and spice are also evident. The tannins are fine and elegant - a hallmark of the varietal. The palate is well balanced, complex and fulfilling and lingers on the finish.

This is a rich full-bodied wine yet at the same time, remains in balanced across the palate with fine, elegant tannins – the hallmark of great Cabernet.
